An ingredient can organise a dining project without appearing as a separate course. Casa Andorinha’s 2023 São Paulo programme used olive oil as the starting point for a setting, a menu and products that could be taken home.
WAYFARER Brazil’s October account described the collaboration with Dalva e Dito under Alex Atala’s culinary curation. The temporary programme combined restaurant service with a market and takeaway structure, allowing the encounter to continue beyond a meal on site.
The source also described an educational presentation around olives and oil production. That supplied a different register from the restaurant: the ingredient could be examined through its process as well as through what was prepared with it. The relationship between those activities mattered more than treating the room as a literal recreation of an olive grove.
This adaptation does not present the temporary programme, its brunch hours or its entry conditions as currently available. It makes no independent nutritional or environmental claim for the products. The lasting question is how a food brand gives an ingredient context. Here, cooking, explanation and the market format offered three different ways to meet the same subject.
