A restaurant counter can change how closely a diner follows the preparation of a meal. Giro Ristobar’s 2023 São Paulo account described an integrated kitchen and bicycle-inspired seats, giving the room a visual relationship with its name.
WAYFARER Brazil’s October portrait introduced the Eataly project through chef Salvatore Loi and restaurateur Felipe Santiago. The proposition connected Italian preparations with individual variations rather than using tradition as a reason to leave every dish unchanged.
The original menu included beef tartare, a filled burrata with dehydrated black olives and white-chocolate zest, and a fine lasagnetta with veal ragù. These are details of the opening-period account, not a checked selection for a meal today.
The counter mattered as much as the list. It placed cooking within view and gave someone a reason to choose one seat over another. Nearby small tables supplied a different relationship with the same room. No new tasting or claim of chef interaction is added here. The restaurant’s archive portrait is strongest as a study of proximity: ingredients become a plate in a space where the process is allowed to remain visible.
