The first encounter with a dish need not happen when it reaches the table. In WAYFARER Brazil’s March 2026 account of MATER1A, ingredients were displayed before the meal, making the raw material part of the restaurant’s sequence.

Chef Victor Garvey’s London project brought Japanese references into a small dining room. The original account described Shine Muscat grapes and tatami iwashi among the ingredients seen on arrival. Their presence offered a vocabulary for what would follow, without requiring every detail to be explained on a menu.

On the plate, that vocabulary crossed different places. A smoked Cornish sardine appeared with Shine Muscat and Marcona almonds. Other preparations used sakura miso, kabosu kosho and yuba. The interest lies in the combinations and their structure, not in treating a single ingredient as a badge of status.

This adaptation does not claim a new tasting or repeat historical menu formats as a current booking promise. It follows the original account’s central idea: the meal begins with an act of looking. Once the ingredients have been encountered directly, a finished dish can be read as a transformation rather than an object that arrives without a past.
