Cariño in the 2024 guide: familiar forms reconsidered

Norman Fenton’s restaurant appeared in the archive through a menu that changed the texture of familiar Mexican references.

A familiar preparation can remain recognisable after its texture changes. Cariño’s 2024 archive account described dishes that used that tension as part of their structure, moving between Mexican references and individual transformations.

WAYFARER Brazil’s December portrait placed chef Norman Fenton’s restaurant in Chicago’s Uptown neighbourhood. Huitlacoche ravioli with fried corn silk and a lamb tartare tostada supplied two examples. Michelin’s own account confirms Cariño’s first star in the 2024 selection and identifies those preparations in its description.

The source also discussed a reinterpretation of chips and salsa through a salsa verde gel and tortilla crumble. What matters in that description is not novelty alone. The components retain a relationship with an expected dish while asking the diner to encounter its elements in another form.

This adaptation does not report a new tasting or use the 2024 award as a substitute for checking a later guide. Historic dishes are not promised as current menu items. The restaurant’s account is useful as a study of translation: a culinary reference is carried forward through ingredients and composition, even when its familiar physical arrangement has been changed.
