Mila: an osteria with more than one reference

The 2024 account connected Italian forms with São Paulo ingredients, shared plates and a distinctly coloured room.

An osteria can use Italian forms without treating them as a boundary. Mila’s São Paulo account brought pasta and shared plates into a room whose references extended beyond a single national image.

WAYFARER’s February 2024 portrait described chef Danillo Coelho’s menu alongside the project developed by Tito Paolone. Architects Rogério Gurgel and Caio D’Alfonso used cinematic references and a strong colour vocabulary, giving the setting a character apart from a conventional rustic dining room.

The food followed a similarly mixed register. Small plates included raw beef with curd and fried pizza, while a pasta section moved between cacio e pepe with roasted mushrooms and rigatoni with tomato and stracciatella. Cumaru entered a dessert described in the original menu account.

No new tasting or current dish availability is implied here. The report also distinguished the room’s daytime light from its warmer evening illumination, a reminder that design participates in how a meal is experienced. Mila’s proposition was not the absence of rules. It was a defined framework with room for several references: an Italian form, a São Paulo setting and ingredients that could make their own contribution.
